Retreat menu

Farm-fresh eggs and organic produce are from Red Moon Farms, an organic family farm and CSA that serves the Dallas, Tyler, and Longview areas. Rustic breads are from KC's Kitchen, a family-owned bakery that serves Canton and the surrounding area.

Afternoon snack (Friday and Saturday)

  • Olives, roasted nuts, house-made pickles, crackers, and cheese

Friday dinner

  • Sunshine pasta: dressed in a zesty extra virgin olive oil with lemon, garlic, and garden-fresh herbs
  • Roasted, herbed chicken
  • Tomato basil salad
  • Sautéed summer vegetables
  • Salad bar: power greens with peppers, cucumber, feta, and roasted pecans
  • Homemade rustic bread

Saturday breakfast

  • Peach cobbler oatmeal: made with fresh peaches and maple syrup
  • Greek yogurt bowl: house-made granola, roasted pecans, fresh berries, golden raisins
  • Lemon berry coffee cake
  • Hard-boiled farm fresh eggs
  • Seasonal fruit

Saturday lunch

  • Build your own summer salad: power greens, roasted chicken, fresh berries, sliced peaches, golden raisins, hard-boiled eggs, peppers, cucumbers, feta, roasted pecans, and house-made croutons.
  • Lemon basil hummus served with veggies, crackers, and exotic root veggie chips

Saturday dinner

  • Summer herbs salad trio: greek yogurt chicken salad, tomato basil pasta salad, and fruit salad with mint

  • Summer veggie scramble: farm-fresh eggs scrambled with pan-roasted veggies and cheese, served with homemade salsa

All of the meals are freshly prepared using local and organic ingredients whenever possible. Meals are served buffet style. Fewer options may be available for guests with dietary restrictions.
