Nadiafna is Venezuelan, residing in Mexico. In her holistic vision, she cultivates meditation and has practiced the discipline of yoga as a way of life for more than 10 years, having completed extensive courses in Hatha yoga, approved by the International Association of Yoga Therapist (IAYT) and National Ayurvedic Medical Association of India (NAMA), which eventually led her to become a Professor of Clinical yoga and Ayurvedic Science at Santosh Puri Ashram in Haridwar, India in 2011. She also practices Vipassana meditation and experimental dance.
Palenque, Chiapas is a town in the middle of the jungle. It is located in the south of Mexico, close to the border with Guatemala.
El Colombre offers a breakfast that includes organic fruits from our their orchard or from the orchards of the group to which they belong, the yogurt is usually made with wild milk from the area. The granola is made by a women's association of a nearby community, contains oats, peanuts, amaranth, raisins, and toasted almonds, and is sweetened with honey.
The bread is homemade and freshly baked, made with a mixture of 50% white flour and 50% whole wheat flour - both organic - with oats, chia and linseed. The eggs are from their own hens, or from our neighbor when necessary, bred with natural corn and without processed foods, are fertile eggs.
The delicious coffee they offer is organic, a selection of Márago and Caracolillo that is provided by an association of peasants of Ocosingo, is roasted and ground for express, and if they prefer can be made lighter, also this organization provides El Colombre with honey. The milk is usually a complaint from the neighbor Doña Dolores, who milks her cows daily and provides them with milk, cheese, and salted cream.
They consist of a varied menu that contains grains (chickpeas, Lentils, or beans), soup of the day or vegetable creams (pumpkin, zucchini, green banana, mixed, broccoli), salad season, pasta with pomodoro filetto or pesto sauce, zucchini au gratin, soy, rice, corn cobs, tortillas, sauces, potatoes, or baked vegetables.
Please book your flight to arrive at Palenque International Airport (PQM). Transfer from and to the airport is included. El Colombre will pick you up from the airport.
